Baja Tacos
Wednesday, May 5, 2010 at 10:10AM I just received a great new recipe from our friend Sharilyn Catone, one member of the family-owned business Raw Revelations which sells some delicious raw vegan snacks.
I was going to wait to post this recipe until we had a chance to make it ourselves, but in honor of Cinco De Mayo, I thought it was only fitting to go ahead and share the recipe today. Plus, Sher is one of the most creative people we know when it comes to creating vegan recipes, and anything including falafel and vegenaise must be (sinfully) good. We know what we're making for dinner tonight!

BAJA TACOS

Ingredients:
white corn tortillas
packaged falafel mix
chopped cilantro
sliced avocado
lime wedges
salsa
1/3 cup vegenaise
juice of one lime
salt
several shots of hot sauce
Instructions:
- Prepare falafel mix according to directions
- Make falafel into finger size shapes and flatten
- Fry until golden on both sides, drain on paper towel
- Mix vegenaise with lime juice, hot sauce, and salt to taste
- Heat tortillas and stack 2 on a plate
- Top with 2 pieces of falafel
- Cover with shredded cabbage and cilantro
- Drizzle sauce and then add avocado slices
- Fold to make taco and serve with lime wedges and salsa
