In the Mood

With Valentine's Day fast approaching, here are some healthy foods to share with your lover that are sure to get you both "in the mood." 

 

Vegan Aphrodisiacs: [via goveg.com]

Asparagus:

Asparagus is high in vitamin E, which increases blood and oxygen flow to the genitals, and potassium, which is important for healthy sex hormone production, making this veggie a well-known aphrodisiac. Its suggestive phallic shape makes it as enticing to the eye as it is to the mouth. To get the best effect, eat this delicious and healthy vegetable at least three days in a row. 

Bananas: 
A fruit with a sexy shape, bananas are said to contain chemicals that can lift your mood and make you more confident. Bananas are also famously high in potassium, a nutrient that aids in sex hormone production and boosts energy. 

Berries: 
The perfect foods to feed your lover, strawberries, raspberries, and blueberries are high in vitamin C, which is important for making sex hormones and neurotransmitters 

Carrots: 
Carrots are bursting with vitamin A, a nutrient needed for producing sex hormones. For guys, vitamin A is vital for sperm production. 

Chili Peppers:
These sizzling veggies will spice up your meal and your evening! Adding chili peppers to your dishes gets your heart pumping and produces neurochemicals known as endorphins, which make you happier. 

Chocolate:
Nothing shows your love—or your compassion—better than a box of vegan chocolates for your sweetheart. Chocolate contains the chemical phenylethylamine, which is believed to stimulate romantic feelings by making you happy and excited. Its natural caffeine provides an added boost by giving you more energy. 

Ginger: 

Seasoning your meals with ginger will enhance blood flow to all parts of your body as long as your arteries aren't clogged up from eating the cholesterol and saturated fat in meat, eggs, and dairy products. 

Licorice: 

A fun food to hand-feed your lover, researchers have found that the smell of licorice mixed with cucumber is the most sexually stimulating scentfor women. Licorice is widely believed to produce feelings of love and lust—particularly in women. 

Nuts: 
Men should eat cashews, pecans, almonds, walnuts, and other nuts to take in a healthy amount of zinc, which keeps men potent and prevents prostate problems. Nuts are also high in protein, which gives you the energy to keep you going throughout the day—and night. 

Pumpkin:
Neurological research has shown that the scent of pumpkin pie is a sexual stimulant for both men and women, increasing male penile bloodflow by 40 percent. Pumpkin seeds are one of the best vegan sources of zinc, which for men is crucial for potency and in preventing prostate problems. 

Soy: 
Soy isn't just protein-packed and amazingly versatile—it's also great for the sex lives of both guys and gals. For women, soy's natural nutrients have been linked to less PMS and better lubrication (meow!). The benefits for guys are even better—soy has been found to lower men's chances for developing cancer of the prostate (a vital gland for keeping everything pumping in thebedroom). Researchers at Kansas State University found that soy protein was just as good as beef for guys trying to gain muscle mass. But quite unlike cow flesh, tofu and veggie burgers have zero cholesterol and almost no saturated fat, substances that lead to heart disease, impotence, and other not-so-sexy stuff, like bad breath and body odor.

Raw Fudge

If you've been reading our blog, then you must know by now that we are chocolate fanatics! We've made lots of vegan chocolate desserts in the recipe posts, but none of them were raw. We wanted to see if we could improve the health factor of our desserts, so we recently purchased Ani Phyo's book "Ani's Raw Food Desserts, which looks amazing! Unfortunately since we're in the midst of moving, it got packed away somewhere in storage. Bummer.

We can't wait to get started trying out some of her delicious raw dessert options, but in the meantime, one of our dearest friends, Rachelle, just sent us a recipe and photo for Raw Fudge that she swears is delicious! She's a great vegan cook so I tend to believe her. We've been M.I.A. on the recipe posts for a bit, but thanks to Rachelle we can share this dessert recipe with you, just in time for the weekend. Enjoy!

RAW FUDGE


Ingredients:

1 cup medjool dates and a vanilla bean cut into pieces
(soaked in just enough water to cover overnite to soften) 

3/4 cup raw cashew butter 

1 cup raw cacao powder (peel and dehydrate cacao beans then grind up to a powder) 

3/4 c. raw carob 

1/2 c. raw mesquite powder 

1 T. coconut oil  

Splash of agave nectar 

Pinch of salt


Instructions:

  1. Blend all the ingredients in a powerful blender until it is a smooth batter.
  2. Line a glass baking dish with wax or parchment paper and pour on the batter.
  3. Freeze for a few hours, take out of freezer to cut into squares and put back into freezer.
  4. The next day its ready and kind of solid.
  5. It starts to get really gooey as it thaws so I just pull a piece out of the freezer when I want to eat one. 
  6. These are not exact measurements as I just tend to eyeball all the ingredients.

Devil's Food Cake

We decided on a chocolate theme for this week, or maybe it just happened by default. We've noticed when we're stressed or going through challenging situations we tend to crave it much more often than usual. I also swear it has something to do with heredity because my mom is a chocolate addict herself. :)

My mom's favorite dessert has always been devil's food cake with buttercream frosting. She's definitely not a vegan, but that hasn't stopped us from creating delicious vegan desserts that we can enjoy together. This past mother's day we veganized her favorite recipe and made these chocolate cupcakes. It turned out to be a HAPPY mother's day for the vegans and non-vegans alike. 

 

Devil's Food Cupcakes

Ingredients:

3 cups whole wheat pastry flour

3/4 c cocoa powder

1/2 t salt

2 t baking soda

3/4 c vegan butter (We use Earth balance)

1 1/2 c organic sugar

1/4 cup filtered water

2 cups vanilla soymilk

3 t vanilla

 

Instructions:

  1. Preheat oven to 350 degrees
  2. Stir together flour, cocoa powder, salt and baking soda
  3. Blend together butter, sugar, and water. Add to flour mixture.
  4. Add soy milk and vanilla and mix gently.
  5. Pour into cupcake tins lined with eco-friendly baking cups.
  6. Bake for 30 minutes. Test with a toothpick.

 

Vegan Buttercream Frosting

Ingredients:

4 T Vegan Butter

3 cups Organic Powdered Sugar

4 T Vanilla Soymilk

2 t organic vanilla extract

 

Blend together and ice cupcakes. 

If chocolate frosting is preferred, add 3 T cocoa powder to the mix.

Chocolate Macadamia Cookies

A chocolate lovers dream! The dough is so good (and egg free) that you’ll even want to eat it raw. We found the original recipe a couple of years ago in Vegetarian Times and gave it a few tweaks. These are pretty simple, but will definitely fulfill a chocolate craving.

 

Ingredients:

1 cup sugar

¾ cup vegan butter (we use Earth Balance)

1 t  ener-g egg replacer

2 t vanilla

1 ¼ cups whole –wheat pastry flour

½ cup unsweetened cocoa powder

½ t baking soda

½ t baking powder

¼ t salt

½ cup vegan chocolate chips (we use sunspire minis)

½ cup macadamia nuts chopped (substitute with your favorite nut)

 

Instructions:

  1. Preheat oven to 350 degrees
  2. Beat sugar and margarine in medium bowl with electric mixer until creamy.
  3. Beat in egg replacer and vanilla.
  4. Combine flour, cocoa, baking soda, baking powder and salt in large bowl.
  5. Stir the wet mixture into the dry mixture.
  6. Fold in chocolate chips and nuts.
  7. Roll dough into 2 inch balls, flatten slightly with knife and place on baking sheet.
  8. Bake 10 to 12 minutes and cool completely before removing from baking sheet.

 

Additional Comments:

This dough is thick and may be a bit dry. If necessary, add a little bit of water (1-2 tsp) and use your hands to shape the dough into balls.

Oatmeal Chocolate Chip Cookies

Delicious, easy to make and completely addictive – you’ve been warned!

 Before we committed to going vegan, we had one lingering question. Would we ever enjoy dessert again?  

The answer we found is a resounding YES! We are chocolate lovers and we've been able to find and create an endless assortment of amazing desserts that satisfy the need to indulge. While this is definitely not a “health food,” it is a delicious treat. Plus, the recipe only makes a small batch, so you won't be racked with guilt. ;) Enjoy!

 

Oatmeal Chocolate Chip Cookies

preheat oven to 350 degrees

Ingredients:

1/2 cup vegan butter

1/2 cup white sugar

1/4 cup brown sugar

1/2 T molasses

2 t vanilla

1 cup whole wheat pastry flour

1/2 cup oatmeal

1/2 t baking soda

1/2 t salt

1/2 cup (or more) vegan choc. chips 

1/2 cup walnuts 

 

Instructions:

Cream together vegan butter, white sugar, and brown sugar.

Add in the vanilla and molasses.

Combine the flour, oats, baking soda and salt, add to wet mixture and mix well.

Fold in chocolate chips and nuts.

Roll into balls on an ungreased cookie sheet. Use a fork or knife to press down.

Bake for 10-11 minutes until cookies are browned.

Leave cooling on the cookie sheet for 5-10 minutes.

Remove from cookie sheet and cool.

*We move them to cool on paper towels so that the butter can get soaked up.
