Sautéed Kale with Quinoa
Sunday, January 1, 2012 at 1:00PM There is a love affair with kale going on at our house and we have to thank Veggie Grill for getting us started with their delicious steamed kale and All Hail Kale salads. Knowing that kale ranks near the top of the superfoods list, we decided we wanted to start eating it at home as well, so the following dish has become our new go to meal for a quick, healthy dinner.

Sautéed Kale with Quinoa
Quinoa Ingredients:
1 cup quinoa (uncooked)
1 1/2 cups water
salt and pepper to taste
Quinoa Instructions:
- Rinse the quinoa before cooking to avoid a bitter taste.
- Bring 1 1/2 cups water to boil in medium saucepan.
- Add rinsed quinoa and salt and pepper, bring to a boil.
- Lower heat and simmer the quinoa for 15 minutes, do not remove lid.
Toast slivered almonds while quinoa is cooking. - Remove from heat and allow to sit for 5 minutes covered.
We usually start the kale when quinoa is removed from the heat. - Uncover and fluff with serving spoon when ready to serve.
Sautéed Kale Ingredients:
1 bunch chopped kale (5-6 cups)
1/3 cup slivered almonds (toasted)
1/2 medium lemon
1 1/2 T Olive Oil
1 T Soy Sauce
Sauteed Kale Instructions:
- Toast almonds on medium heat for 7-8 minutes (until golden brown). Then set aside.
- Heat olive oil and soy sauce on medium heat.
- Add kale and toss with oil and soy sauce, then cover for 30 seconds.
- Remove lid and add juice from lemon and continue to saute kale until cooked (2-3 minutes)
- Serve with quinoa and lightly drizzle with Follow Your Heart's Miso Ginger dressing. Garnish with toasted almonds and serve.
