Carrot Juice

Juicing has long been known as a great way to consume a substantial amount of nutrients and enzymes in short order, even more than eating the fruit in it's whole form.
According to living-foods.com -
"...since juicing removes the indigestible fiber, these nutrients are available to the body in much larger quantities than if the piece of fruit or vegetable was eaten whole. For example, because many of the nutrients are trapped in the fiber, when you eat a raw carrot, you are only able to assimilate about 1% of the available beta carotene. When a carrot is juiced, removing the fiber, nearly 100% of the beta carotene can be assimilated."
While a high fiber diet is recommended, (we still eat plenty of whole fruits and vegetables) the truth is that the average American only eats 1 1/2 servings of fruit or vegetables a day. The National Cancer Institute recommends 5 vegetables and 3 fruits daily. Juicing makes it much easier to meet these nutritional goals.

Here's the Carrot Juice recipe we've been using:
8-10 organic carrots
3 medium sized organic apples
1 inch cube of fresh ginger
Use a juicer and drink immediately.
Serve in a wine glass if you want to feel especially fabulous. Cheers to improving health!
